“Dripping Springs Vineyard”
The vineyards are the result of careful planning from the first test vineyard to the continuous expansion. A collaboration of effort by enologists, University agricultural specialists and world recognized vine – rootstock experts along with the special considerations in vineyard design, site selection and construction, have resulted in the successful vineyards.
The eastern exposure allows a cool down from the intense summer heat offering the grapes a rest and therefore not depleting the vines of its acids and flavor compounds by avoiding over-respiration.
In this special place above Barton Creek, the natural qualities of limestone filtered water, free draining soil, constant breeze, dryness, gently sloping terraced terrain and hot sunny days and cool nights have combined to create the perfect home for the desired Italian red varietals including Barbera and Montepulciano.
In order to create the ventilation necessary to sustain the thriving vineyard, acres of cedar have been cleared to allow the natural breeze to rise up the hill and through the vineyards.
Vineyard fencing and sub-fencing have been constructed in a manner to blend with the landscape but yet close the vineyard doors to the wild life including the multitude of white tail deer which stand by daily and nightly looking into what they must see as an all you can eat salad and fruit bar.
