The newly constructed wine making facility is strategically situated on the highest elevation of the expansive Estate overlooking the Vineyards and Pavilion. The facility is built adjacent to the vineyard allowing for rapid transport of the handpicked grapes to the Destemmer-Crusher which is done in the coolness of night to prevent spoilage and maintain purity. After a gentle destemming process the must is quickly transferred into the waiting temperature controlled tanks and select oak barrels for the fermentation and aging process.
Oak barrel aging at Solaro Estate takes place inside specially designed barrel storage units where the temperature is maintained within 1.5 degrees. Constant temperature control from harvest to bottling is one of many critical factors.
